Thai-Style Beef Lettuce Wraps Recipe

Ingredients

8 oz prepared ground beef (or use Beyond Meat)
2-3 cups romaine hearts (remaining inner leaves)
1 ½ cup prepared coconut basmati rice
¾ cup cucumber, sliced
¾ cup cherry tomatoes, halved
¼ cup shallot, thinly sliced
2-3 tablespoons cashews, chopped
½ cup fresh herbs (try mint and cilantro)
1–2 tablespoons toasted sesame oil
1 lime, halved

Instructions 

If desired, reheat the ground beef in a saute pan or microwave, otherwise enjoy at room temperature.

Divide the prepared coconut rice among 2 large serving bowls. Divide romaine hearts and ground beef evenly among each bowl. Top with cucumber, cherry tomatoes ,shallot, prepared cashews, and fresh herbs. (Note: You can serve this dish as a rice-and-greens bowl, or serve romaine on the side to use as wraps for the beef, rice, and veggie mixture.)

Drizzle each bowl with about a tablespoon of toasted sesame oil and the juice of half a lime. Season with flaky salt.
