Soba Noodles with Roasted Radishes, Edamame, and Ginger-Chive Butter

This twist on radishes with salt and butter pairs the tender crunch of roasted radishes with hearty soba noodles.

Soba Noodles with Roasted Radishes and Edamame

Yield: 4 servings

Ingredients

2 cups radishes, cut into quarters
 1 tablespoon neutral-tasting oil such as grape seed oil
 4 tablespoons butter, room temperature
1 tablespoon grated fresh ginger
3 tablespoons minced chives
1 tablespoon sesame seeds
2 teaspoons toasted sesame oil
1/2 tablespoon Maldon salt 
1 package soba noodles, cooked according to package instructions 
1 cup shelled defrosted edamame 

Instructions

Preheat oven to 375 degrees. Toss the radishes with the oil and scatter on a baking tray lined with parchment paper. Roast in the oven for 10 to 15 minutes.

Meanwhile, place the butter, ginger, chives, sesame seeds, sesame oil, and salt in the bowl of a small food processor and pulse to combine.

Toss the soba noodles with the ginger-chive butter, roasted radishes, and edamame. Serve either warm or cold.
