Cinnamon & Collagen Rice Pudding Recipe

Rice pudding is a chameleon. When you add simple ingredients and aromatic spices to the pot, this dish can fill you up for breakfast or end your meal on a protein-filled note, your choice! The almond milk base lends itself to soaking up fragrant ginger, nutmeg, and cinnamon, and a boost of collagen powder—made from four different sources—will help nourish your body while you nosh.

Cinnamon & Collagen Rice Pudding

Ingredients

4 cups unsweetened almond milk
½ cup maple syrup
2 cinnamon sticks
1 teaspoon ground ginger
½ teaspoon ground nutmeg
½ teaspoon sea salt
1 cup sushi rice, rinsed
5 scoops Ancient Nutrition Dr. Axe Multi Collagen Protein Powder
Ground cinnamon, for garnish

Instructions

Add almond milk, maple syrup, cinnamon sticks, ginger, nutmeg, and salt to a large saucepan; bring to a boil. Reduce heat to simmer and add rice. Cook covered, stirring occasionally, for 20 to 25 minutes, or until the pudding is creamy and rice is tender. Discard cinnamon sticks, then stir in collagen powder until blended. Serve in bowls with extra cinnamon sprinkled on top.
