The classic combination of peanut butter and jelly gets an upgrade in these snack-sized sandwiches. Adults and kids alike will love the chocolate-covered bites of crunchy gluten-free cracker, almond butter, and raspberry preserves. Have even more fun with it by letting your little ones get involved in the kitchen!
Yield: 4 to 5 servings

40 Mary’s Gone Crackers
1/2 cup almond butter
1/3 cup raspberry jam
10 ounces dark chocolate
Spread almond butter one side of 20 crackers. Spread jam on the other 20 crackers. Sandwich together. Place on cooling rack set on top of baking sheet.
Melt the chocolate in a heat-proof bowl placed over a pot of simmering water. Remove from heat and let cool slightly. Spoon melted chocolate over cracker sandwiches. Let chocolate harden before serving.
