Cherry Vanilla Recovery Pops Recipe

Popsicles might not have a wholesome reputation, but wait until you try this dairy-free recipe that alternates flavors of creamy coconut and sweet cherry, protein powder included! (And you can’t even taste it.) Summer heat? We say bring it on.

Cherry Vanilla Recovery Pops

Yield: 10 popsicles

Total Time: 6 hour and 20 minutes

Ingredients

For cherry mixture:
2 cups fresh cherries, pitted and chopped
2 tablespoons raw honey
¼ cup water
1 teaspoon vanilla extract
¼ teaspoon sea salt

For coconut mixture:
1 scoop Garden of Life SPORT Organic Plant-Based Protein, Vanilla
½ cup coconut water
1 (13.5-ounce) can coconut cream

Special equipment:

Popsicle molds
Popsicle sticks

Instructions


Make the cherry mixture:
Add cherries, honey, water, vanilla, and salt to a small saucepan. Cook over medium heat until cherries break down and the sauce is slightly thickened, about 7 to 9 minutes. Off heat, smash cherries with the back of a spoon, then cool completely.

Make the coconut mixture:
In a small bowl, whisk protein powder into coconut water until dissolved. Stir in coconut cream.

Assemble the popsicles:
Fill popsicle molds to the top starting with a spoonful of the coconut mixture and alternating with a spoonful of the cherry mixture. Tap slightly to remove air bubbles, then top with the lid and slide in popsicle sticks. Freeze at least 6 hours.
