A Classic Reinvented: Raw and Sugar-Free Thumbprint Cookies

And on the eighth day of the 12 Days of Christmas Cookies, Thrive Market gave to me … thumbprint cookies made raw and sugar-free! Here, we’ve reimagined the ubiquitous jam-filled treats by swapping out butter and flour for coconut oil and rolled oats, and mixing up a quick chia-berry jam for the center.

Raw Thumbprint Cookies

Yield: 12 cookies

Total Time: 1 hour and 15 minutes

Ingredients

For the cookies
2/3 cup almonds
2 tablespoons coconut oil
2 tablespoons raw honey
1/2 teaspoon sea salt
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
3/4 cup rolled oats

For the jam
1 cup mixed blueberries, strawberries, and raspberries
2 to 3 tablespoons raw honey 
4 tablespoons chia seeds

Instructions

Make the cookies
Process all the ingredients but the oats together in a food processor until they form a thick, slightly chunky dough. Add the oats and pulse until the mixture comes together and the oats break up slightly. Form into 1-inch balls and make a thumbprint indentation in the center of each. Place in the fridge for an hour to set.

Make the jam
Place the berries and honey in a food processor and process until smooth. Transfer to a small bowl and stir in the chia seeds. Let stand 15 minutes to thicken, then fill each thumbprint with the jam. Store in fridge up to 3 days.
